Salmon a La Manga
(with Chanterelles)

1/2 cup chopped onions - saute in 1-2 Tb olive oil or butter
1 cup chopped chanterelles - saute until dry
add 4 Roma tomatoes - peeled & chopped - saute until softened
chopped fresh parsly
Salt & Pepper

Serve over grilled salmon filet
